Paul Thomas, Fairfield County native, has returned to the area from New York City, and will continue offering his services as a Sommelier.<br><br>Paul Thomas, who learned his trade from Master Sommeliers Greg Harrington and Laura Maniec in the hospitality industry, most recently served as a Sommelier in New York City for BR Guest Restaurants, which owns such properties as The Blue Water Grill on Union Square, Blue Fin on Times Square, Atlantic Grill, Ocean Grill, Primehouse Steaks and Dos Caminos.<br><br>Mr. Thomas has also served as Sommelier at the MGM Grand in Las Vegas and the Ritz Carlton in Beverly Hills He also studied Wines in Bordeaux, France and Tuscany, Italy.<br><br>Mr. Thomas, founder and director of Renaissance Sommelier Group, hosts private Wine events, private tastings in people&#39;s homes, charity and corporate events.  He is currently working with Oceania Cruises, a luxury cruise line that specializes in Wine and Food pairing dinners. He works side by side with the unequaled Master Chef Jaques Pepin to bring world class dining experiences to an exclusive clientelle.

He also works with local restaurants and Wine shops hosting Wine tastings, Wine dinners and charitable events. He is an educator as well, and conducts small Wine classes in private homes and local restaurants.<br><br>Mr. Thomas&#39; approach is unique is that he pairs certain types of music with the appropriate Wines when he hosts Wine dinners. For a Champagne course, for instance, he may have some &#34;light and bubbly&#34; music.
